It was because of creation of his horcruxes. His soul got mutilated because of it’s ripping so many times and thus Voldemort grew less human in appearance.
He lost his nose as a sacrifice for immortality, such an immoral deed of tearing ones’ souls into pieces made him a little less human and so he lost his human features and developed reptilian features (like snakes who have slits in place of an actual nose).
Voldemort hadn’t made Nagini a horcrux in the first movie, so maybe his appearance changed some more after slicing off some more soul. And his body was sliced off the nose.
Actually Voldemort does have a nose. It’s described as flat with two slits for nostrils. The reason for this is because as he created the horcruxes, he was damaging his soul beyond repair and it affected his appearance. He was becoming more and more snakelike In his physical features.
